If you only have whole mozzarella, cut it into smaller pieces. Ensure that the size of the pieces is sufficient to fit the molds and fill all the forms when melted, resulting in sharp and attractive shapes.
- Prosciutto: You can use rounded-cut prosciutto or analog ham. In my recipe, I used coppa prosciutto which is already cut round in shape to save some prep time. But you can use the kind according to your preference. If you use standard-sized prosciutto slices, just cut them in halves. Spanish jamon will also work well.
- Grapes: Purple grapes are the taste-determining ingredient alongside mozzarella and prosciutto. I suggest using high-quality, medium to large-sized seedless purple grapes and not substituting them with anything else. The sweetness of the grapes creates a perfectly balanced and delicious flavor, so there’s no need to add any oil or glaze.
- Halloween molds: I suggest purchasing silicone Halloween-shaped molds in advance. Spooky Halloween Appetizer – Mozzarella Grape Prosciutto Skewers
Equipment
- 1 skull-shaped or Halloween-shaped silicone molds (small to medium size)
Ingredients
- 8 ounces fresh mozzarella (200 g), pearls
- 8 normal or 16 small slices prosciutto (about a 4 oz package, 100 g)
- 16 ripe red seedless grapes (around 8 oz/200g)
Instructions
- Preheat the oven: Preheat to 350°F (180°C).
- Prepare the mozarella: If using whole mozzarella, cut it or shred it into small pieces that will easily fit into the mold.
- Prepare the molds: Place the silicone Halloween molds on a baking sheet and fill with mozzarella pieces.
- Bake: Bake for 3-5 minutes, just until the mozzarella is melted but not overcooked or browned.
- Press the cheese (optional): Remove from the oven and use a lightly oiled spoon to press the cheese into the mold, if needed, to make sure all of the molds are filled perfectly with cheese. Blot any moisture with a paper towel.
- Cool & set: Let the cheese cool completely in the molds before removing.
- Prepare prosciutto: Cut prosciutto slices in halves if you are not using small round ones.
- Assemble the Mozzarella skewers: Put ready and cooled mozzarella shapes on the skewers carefully so they don’t get squished, add rolled prosciutto cuts, and finish with whole grapes.

- To expedite the process, consider purchasing multiple identical molds. This will allow you to either bake all the mozzarella at once or minimize the number of batches, depending on the amount of cheese.
